Kristina Carrillo-Bucaram is a highly respected RawVegan Educator, Chef, Speaker, and Raw Lifestyle Coach. At the remarkably young age of 18 Kristina knew that she was going to share her passion for eating raw, organic produce with the world. Kristina, with the help of various volunteers known as, “co-operators” established the first non-profit in Houston, Texas to offer affordable, organic, raw fruits and vegetables. Today, the co-op feeds thousands of followers in the fourth largest city in the nation.
When Kristina was only 16, she came to find out that she was pre-diabetic and was diagnosed with hyperglycemia. This disease subsequently took over her health and caused her to take countless medications and frequently visit various medical and health professionals. Her inquisitive nature led her to believe that her health issues were directly correlated with her diet. Through a timely introduction to juicing advocate, John Rose, during a visit to Whole Foods, he challenged Kristina to adapt a complete raw vegan approach to her diet in hopes to eliminate her struggle with hyperglycemia. She immediately saw an improvement in her health as she eliminated her intake of processed foods and consumed only non- cooked, raw fruits and vegetables.
This discovery changed Kristina’s life forever. She considers the day she became a Raw-Vegan as the first day of the beginning of her new life.
Kristina pursued a triple major at Rice University that included majoring in Kinesiology, Ceramics, and Voice. At Rice University, she was a member of the elite and prestigious honorary educational society, Phi Beta Kappa and graduated Cum Laude. Her personal quest for perfecting the dietary knowledge she had acquired led her to study directly under the guidance of the famed Dr. Douglas Graham, founder of the 80/10/10 principles of the low-fat, raw, vegan lifestyle. Under Dr. Graham’s mentorship, she traveled to Costa Rica and practiced organic farming and discovered firsthand the benefits of harvesting and using community agriculture. Kristina continues to put this knowledge to good use while feeding her local community and followers nationwide with not only fruits and vegetables but also with the joys and benefits that accompany eating organic produce.
In September 2007, Kristina launched the Rawfully Organic Co-Op. Today, the Co-op has raised over $2 million dollars for the greater Houston Agricultural and local Organic Farming Community. The Co-op has close to 7,000 registered members as of August 29, 2012 and serves approximately 2,000 families each month. There are three main drop offs in the metropolitan areas of Houston on Tuesdays, Thursdays, and Saturdays and the co-op also has designated porch pick-ups for more suburban areas.
Kristina is now a well respected local Houston celebrity and national expert in the Raw Food lifestyle and culinary world and has made many media appearances to champion her creative approach to living a more plant based lifestyle and promote the benefits of eating organic produce. Her calendar is continually booked with presentations for health organizations, hospitals, schools, mother’s and women’s groups, corporate health series’, and various other institutions nationwide. Her personable nature and unique achievements led her to be featured twice as the emcee in the Woodstock Fruit Festival in New York, where she led a seven day event of lectures, classes, presentations, and demonstrations. She also currently writes exclusive writing content for PETA and submits recipes to their archive monthly.
Her love affair with fruits and vegetables developed into a culinary mastery of ingenuity and simplicity in marketing easy recipes to help others eat a raw, plant based, cuisine. So much so, that she was featured as a guest vegan chef at Sur LaTable.
